When Pigs Fly Pizzeria in Kittery, Maine features a modern industrial design with wood furniture, metal fixtures and most importantly a Renato wood fired brick oven! Brothers Ron and Andrew Siegal bring an interesting new twist to an Italian classic, the pizza.

 

Their signature crispy yet chewy slow rising crust starts with a very wet sourdough. The dough is cooked in a Renato wood fired oven giving it a hint of smokiness that is to die for. The high temperatures of the oven (800 degrees!) is perfect for cooking the wet sourdough, creating a beautiful crispy and light crust that keeps customers coming back.

When Pigs Fly’s most popular pizza is of course the classic Margherita made with San Marzano tomatoes and chunks of mozzarella made fresh daily. They also have twists on popular classics such as the Hawaiian pizza featuring  grilled pineapple with smoked ham and the classic sausage pizza with fresh mushrooms and arugula.

 

When Pigs Fly is also known for their unique pizzas such as the lamb pizza with spinach and goat cheese or Chef Ron Siegal’s personal favorite the house-made chorizo pizza with Mexican sour cream, pickled red onions and cilantro. Their shrimp and pesto pizza is the favorite of Chef Andrew Siegal featuring native Maine shrimp and sundried tomatoes. All their pizzas are wood fired in the Renato brick oven, giving them their signature crispy, chewy crust and hint of smoky flavor.

 

Pizza isn’t the only thing they are known for. Their appetizers such as their tender short ribs with bacon marmalade glaze and their fire roasted chicken wings are a great start to any meal and their Cookie Sandwich Trio is the perfect finish. The Cookie Sandwich Trio features heath bar cookies with s’mores gelato, double chocolate chip cookies with caramel sea salt ice cream and blueberry cookies with strawberry balsamic gelato all drenched in Cacao Noel chocolate sauce. Yum!

 

The chic 160 seat restaurant boasts a bar with a wide variety of craft beers and draft wines. A screen-in farmers porch and back deck provides the perfect place to relax and enjoy your pizza and wine. As soon as you enter the restaurant the smoke from the Renato wood fired oven hits you and gets you ready for some delicious food.
